Does anyone else ever crave potatoes like crazy? At least once a week, all I want is potatoes. Sweet AND "baked" as I call them. Russets, they're russets. Any potato can be baked. Anyway, I almost always have potatoes and some sort of vegetable on hand so this is an easy plate to throw together or pack and bring to work.
Two potatoes, sweet or baked or both!
4 strips of Tempeh bacon (I like the Tofurky brand)
plain tempeh (1/4 block)
1-2 cups of veggie of choice! Broccoli, kale, brussels sprouts
Bake potatoes at 400 for about 40 minutes
Sauté tempeh bacon in 1 tsp coconut oil, if using plain tempeh, sauté in 1 tablespoon of liquid aminos or 1 tsp oil of choice- spice to taste)
Steam or sauté veggies
Top everything with nutritional yeast, tahini, coconut aminos or spices to taste!
